Our Spring Cheese Collection Featured on Sunday Brunch with Morgan McGlynn Carr -

Explore the essence of spring with our curated selection of artisanal cheeses, expertly paired to tantalize your taste buds and elevate your culinary experiences. Handpicked and crafted with care, this trio showcases three exceptional cheeses, each with its own unique story:

Blue Cornflower Cheese by Gedsted Dairy

Indulge in the creamy and mild perfection of Blue Cornflower Cheese, lovingly crafted with years of experience and expertise. Produced at Gedsted Dairy in close cooperation with Thise Dairy, this exceptional cheese is a testament to the dedication of passionate artisans.

Gedsted Dairy, renowned for its commitment to organic practices, specializes in crafting exquisite blue mould cheeses. The entire cheese production process, from sourcing organic milk to meticulous cheese-making techniques, is conducted with precision and care.

To achieve the desired taste and texture, Blue Cornflower is meticulously crafted in small cheese vats, where the milk is stirred by hand. This hands-on approach ensures that each batch of cheese is imbued with the perfect balance of flavors and textures, reflecting the artisanal craftsmanship of Gedsted Dairy.

Far from being a nostalgic practice, the manual control of the cheese-making process is deemed essential by the experts at Gedsted Dairy. According to a colleague from the dairy, this hands-on approach is a prerequisite for imparting the cheese with its distinct taste and texture, ensuring a truly exceptional culinary experience.

Swiss Pressed Cheese with Appenzell Flowers by Koch Cheese Dairy

Embark on a journey of flavor with Swiss Pressed Cheese infused with the essence of Appenzell flowers, meticulously crafted by Kevin Koch at the renowned Koch Cheese Dairy. This exceptional cheese, made from raw cow's milk sourced from the pristine Appenzell region, is a celebration of Swiss cheese-making tradition and innovation.

Kevin Koch, a passionate cheese-maker and the current inheritor of the Koch Cheese Dairy, has revolutionized traditional cheese-making practices by introducing flavored cheeses and original creations. Despite the evolution, the dairy remains true to its roots, using only the finest, high-quality, mostly organic, and locally sourced ingredients.

For this unique cheese, Kevin selected a special blend of eight different flowers native to the Appenzell region. During the maturing process, the essence of these flowers gradually infuses the cheese, imparting it with a distinctive taste and aroma. The flowery rind, a hallmark of this cheese, is also edible, adding to its allure and sensory experience.

With over 50 years of cheese-making heritage, the Koch Cheese Dairy continues to uphold its legacy of excellence, creating cheeses that delight the palate and captivate the senses. Each bite of Swiss Pressed Cheese with Appenzell Flowers is a testament to the craftsmanship and passion of the artisans at Koch Cheese Dairy, offering a truly unforgettable cheese-tasting experience.

Wigmore by Village Maid Cheese: Wigmore
Embark on a journey of complexity with Wigmore cheese, a testament to artisanal craftsmanship. Crafted by Anne Wigmore in the heart of Berkshire, England, this cheese boasts fruity richness and an unctuous texture that dances on your palate. Paired with bright acidity from mandarin slices and delicate anise flavor from fennel, each bite leaves you craving more. This cheese came 16th in the world at the world cheese awards 2023
