Storage
All of our customers ask us for advice on how best to store their cheese to keep it in peak condition. Cheese prefers cool damp conditions that are found in cellars or larders, which unfortunately are not found in many houses these days. However if cheese is kept too cold, it slows down it’s natural maturing process and it can become flavourless.
If it is too warm then it will become over-ripe and mouldy and will have a strong ammonia flavour, which can be bitter and unpleasant. We recommend that you keep cheese in perlafoil or waxed paper and place a damp cloth over it to help it contain its moistness. If you’re storing it in a cellar or larder (lucky you) then best to take it out of the bag, and simply leave it in its waxed paper.
It’s more likely that households have garages or sheds which are good places to store cheese but, factors such as temperature change and vermin need to be considered! Store the cheese in a cardboard box or cheese safe/larder (if you have one) and follow the above procedures to make sure that nothing can get to the cheese.
Many of us don’t have access to any of the above so in the modern home the refridgerator is the safest and best place to keep your cheese. Again keep the cheese in waxed paper and, if you want to, place it in a Tupperware box (You can buy a breathable Tupperware boxes especially for cheese). Either place the box in the door of your fridge or in the salad compartment as these areas are not as cold as the rest of the fridge.
When you are ready to eat your cheese take it out of the fridge a good hour before to let it warm to room temperature.Presentation is really up to you, we find that slate cheese boards are the best as the cheese looks great on them and they stay cool and keep the cheese in good condition. They are also easy to clean and long lasting.

Occasionally some cheeses are out of stock or season, if this situation arises, we will replace your selection with something we feel is similar to your choice and compliments the rest of you selection. Also if we feel that your cheese is not at its peak (eg. unripe) we will replace it with something similar that is.
QUANTITIES
The minimum quantity of cut cheese is 250g roughly 8oz and we have indicated the weight of individual cheeses. As your cheese is selected and cut to suit your order, there will inevitably be a small margin of error. In cases where we cut one of your cheeses a little underweight we will endeavour to compensate by giving you a larger piece of another of your selection. Weights in selection may vary please check your selection information.
QUALITY
General Rule: Eat Fresh When Possible
Cheese is at its best when eaten fresh, especially if you’re purchasing smaller portions. Whole cheeses naturally retain their quality longer than cut pieces, so aim to consume smaller cuts as soon as you can. If immediate consumption isn’t practical, follow the tips below to store your cheese effectively.
Where to Store Cheese
- Refrigerator Storage: The best place to store cheese in the fridge is in the salad drawer. This compartment maintains slightly higher humidity levels, which helps keep the cheese in optimal condition.
- Important Note: If you’re storing cheese in the salad drawer, avoid keeping salad items in the same space, as they can transfer harmful bacteria to the cheese.
- Alternative Storage: If you have access to a cool, humid cellar or an unheated part of your home with a consistent temperature between 8°C and 15°C, this can be a great environment for cheese, particularly hard cheeses.
Temperature Matters
Different types of cheese thrive in different temperature ranges:
- Hard Cheeses: Ideal at 8°C to 15°C. At warmer temperatures, they will continue to mature.
- Soft and Blue Cheeses: Best stored at lower temperatures, between 5°C and 8°C in the refrigerator.
Maintaining Humidity
Cheese loves a humid environment. Aim for around 80% relative humidity to prevent it from drying out or cracking.
- Fridge Storage: Use the salad drawer, as it’s naturally more humid.
- Alternative Solutions: Wrap the cheese in a clean, damp cloth, or use a container that retains moisture, such as a cheese bell or a sealed cardboard box.
- Too Dry? Cheese will crack.
- Too Moist? Excess mould growth may occur. While mould is natural and often enhances flavour, simply scrape it off if it appears unattractive.
Wrapping Your Cheese
The way cheese is wrapped can significantly impact its freshness:
- Waxed Paper: The waxed paper we use for our cheeses is ideal as it allows the cheese to breathe while preventing it from drying out.
- Cling Film: Not recommended for long-term storage as it traps moisture, encouraging mould growth. If you must use cling film, cover only the cut surface and replace it with a fresh piece each time.
- Foil: Suitable for wrapping moist blue cheeses, as it protects them while maintaining their moisture levels.
Shelf Life and Storage Tips
- Cut Cheeses: Hard cheeses (including robust blues like Stilton) will keep for at least a week if stored as recommended, with a shelf life of around 12 days from the date of cutting.
- Whole Cheeses: Refer to the Use By/Best Before date on the packaging for guidance.
- Christmas Storage: Our final Christmas deliveries arrive a few days before Christmas. To ensure your cheese remains in perfect condition, store it in the fridge as suggested. This slows down maturation and prevents premature spoilage, ensuring it’s ready to enjoy during the festivities.
RETURNS
If you are not happy with any of your goods, supplied by Cheeses, you must inform us within 24 hours after delivery including photos to shop@cheesesonline.co.uk All products must be returned to us or made available for inspection.

- Missed Delivery: Cheeses of Muswell Hill is not liable for missed deliveries. Please ensure you arrange a delivery time and location that works for you with the courier service provided.
Shipping Returns
Pick up orders from the shop in Muswell Hill will be ready for collect at 11 o'clock onwards - please let us know if you need the order at a particular time on - shop@cheesesonline.co.uk

- Any problem with the condition of your cheese must be reported to us within 48 hours of delivery to qualify for a refund or replacement.
- Please email admin@cheesesonline with a detailed description of the issue and include clear photos of the product and its packaging. This allows us to assess the situation and address it promptly.

- Depending on your location, the time it takes for an exchanged product to reach you may vary.
- Trackable Shipping: For higher-value returns, we recommend using a trackable shipping service or purchasing shipping insurance. We cannot guarantee that we will receive your returned item if it is not tracked or insured.
Incorrect Address at Checkout
- Please double-check your billing and shipping address before completing your order. Cheeses of Muswell Hill is not liable for any errors in the address provided during the checkout process.
- If we have made an error with your address, we will fully cover the cost of rectifying and reshipping your order at no additional charge.
- Please note that once an order has been placed, we cannot change the shipping address.
Refunds and Replacements
- Any issue with your order must be reported to us within 48 hours of delivery. This is essential for us to be able to issue a refund or arrange for a replacement.
- Refunds will be processed after we review the details of your issue, including photos of the product.
