The English summer has finally arrived! The best cheese to celebrate the good weather with is our finest buffalo mozzarella, now back in stock. It is lovely served simply, with slices of fresh tomato, basil and olive oil or used on homemade pizza.
Mozzarella is a well-known, traditional Italian cheese made from the milk of water buffalo. It is kneaded by hand, similar to techniques used in bread making, to give it it’s distinctive springy texture. The best mozzarella (the one we stock of course!) has a thin, delicate rind and a rich and creamy centre. It is protected by Italian law so that it is always the best quality – look out for the Mozzarella di Bufala Campana DOP label.

Back in the 19th Century, the Neapolitans created a new pizza to celebrate a visit from the Queen. Toppings of Mozzarella, tomato and basil were added to recreate the colours of the Italian flag and the first Margherita pizza was made.
Mozzarella is high in protein, calcium and good fats but low in cholesterol! So you can eat it guilt free knowing it’s actually doing you some good!
