World famous Parmigiano Reggiano is divine when it is the real thing. As a whole cheese it is huge and our Parmesan is matured for two and a half years. This means that it is not just a cheese that should be used in cooking – it has a fabulous flavour, and is great to nibble! The organic cheese has a sandy colour and a grainy, salty texture to match, due to the calcium crystals of salt that build up inside it. Its flavour is delicate and intense, we prefer it shaved on top of pasta and salads rather than grated as the flavour is more apparent.
