Soft red Bordeaux or a light white
Comté hails from eastern France in the alpine foothills. It has an intriguing, complex flavour that can include hints of apricot, chocolate, cream, hazelnuts and toast. Melted in fondue, or grated and sprinkled on your favourite dishes.
Comte, one of France’s most famous cheeses, has a long and rich history dating back centuries, hailing from a region that specializes in creating this AOC-protected cheese. Our 36 Month Aged Comte has rich flavors of dried fruit, brown butter, hazelnut, and a surprisingly supple texture. It is aged for 36 months in Fort de Rousses, a repurposed stone military fort commissioned by Napoleon in the 1800s, located in France’s Jura mountains.
The owner of the shop Morgan, Visits the fort regularly to try new varies of this particular cheese.
The fort comprises seven levels, most of which are hidden underground and built for optimal affinage. Visionary affineur Jean-Charles Arnaud, the maker behind this Comte selection, relies on natural air ventilation and a stone vault effect to age these special cheeses to a perfect balance of distinct flavor and texture. We select wheels that reflect the mountain environment where the cheese is born, meaning those that feature a light, grassy essence punctuated with subtle hints of citrus.
