So refined, graceful and pure, with stony white fruit, a note of topicality, its sunny-cum-salty disposition reminds me of Etna Bianco. Lots of white currant fruit, quasi Riesling in its purity and lemon/lime zip. Delicious but with the structure to evolve in bottle should you wish.
Pairs with salad greens, sautéed white fish, oysters, smoked salmon, and lighter foods flavored with fresh herbs. It is a classic pairing with goat’s milk cheeses especially those from the Loire Valley region such as Crotin de Chavignol and plain chèvre.
