ASH PYRAMID ( Valencay)
Tall, natural rind individual goats cheese with a superbly strong and sweet flavour. When fresh and young it has a creamy and smooth texture with a light flavour, during the ripening process the cheese almost collapses and the flavour becomes more intense. An ashed, soft and delicate, unpasteurised goats’ milk pyramid from the Loire.
A rich goats cheese which is shaped like a pyramid without the top third. This rich and creamy cheese is covered with a salted charcoal ash, allowing Pyramide to keep its flavour for longer. As it matures,a natural blue mould forms round the outside.
